Carrot Cake and Tropical Overnight Oats

Base Recipe:

1/4 cup rolled oats

1 Tbsp ground flaxseed

1 Tbsp chia seed

1 Tsp raw castor sugar

1 cup low fodmap plant milk
Method:

Mix all ingredients together, stirring thoroughly and leave overnight to soak. Enjoy cold in the morning.
Carrot Cake:
-
1/2 cup carrot, grated
-
1/2 cup walnuts (1/4c mixed in, 1/4c on top)

1/2 tsp cinnamon
-
1/4 tsp nutmeg
Tropical:
-
1/4 cup strawberries, blended into milk
-
1/4 cup papaya, blended into milk
-
1 kiwi fruit, sliced and diced
-
A few scoops of coconut yoghurt
