Low FODMAP PB&J Chia Pudding

Ingredients:

  • 2 Tbsp chia seeds (I used white but any are ok)

  • 1 Tbsp acai powder

  • 1 cup water

  • 1 tsp maple syrup

  • 1/4 tsp vanilla extract

  • Peanut butter & strawberry jam spread around the jar 

  • Strawberries and crushed nuts for decorating!

Method:

  1. In a container mix the chia with the acai until combined, add water, syrup and vanilla.

  2. At this point it will look like you have too much fluid but these things expand like nobodies business! Leave to sit for at least 4 hours. Stirring occasionally will give the best consistency.

  3. When ready do some blobs and swirls on a jar using peanut butter and strawberry jam, add your acai pudding, top with decorations and enjoy!!
