Rice and Chickpea Salad

Ingredients:

  • 1/4 cup canned chickpea, rinsed thoroughly

  • 1/2 cup cooked rice

  • 1 carrot, grated

  • 1/4 red capsicum, diced

  • Handful baby spinach

  • Spoon of vegan mayo

  • Salt & pepper

Method:

Just toss it all together!
