Roast Potatoes in Balsamic Vinaigrette
Ingredients:

2 cups of crispy roast potatoes

1 tbsp good quality balsamic vinegar

1 tsp garlic infused EVOO
-
1/4 tsp oregano
-
1 sprig of spring onion greens
Method:
Just mix it together and enjoy!
Nutrition Fact:
White potatoes get a bad wrap but they're actually an excellent source of vitamins C and B6, and the mineral potassium and a good source of iron, and magnesium. Their resistant starch content also helps to feed your gut bacteria and helps you to feel full and satisfied.
