Chickpea Quiche
Ingredients:

Pastry of your choice (optional)

1 1/4 cups chickpea flour

2 Tbsp Savoury Yeast Flakes
-
2 Tsp Dried Oregano
-
1 Tsp Dried Basil
-
1 Tsp Dried Rosemary
-
1/2 Tsp Black Salt
-
1/2 Tsp Bicarb Soda
-
1 Pinch of Fresh Black Pepper

1 Clove Minced Garlic
-
1 1/2 cups water
-
2-3 cups of diced veggies (I used spinach, tomato, onion capsicum, zucchini, and pumpkin)

I also added a few cubes of vegan feta
Method:

Preheat oven to 180°c.

Line a flan tin with pastry if desired.

Mix dry ingredients in a large bowl, add water and stir until combined.
-
Sautee your veggies until tender then mix them into your chickpea flour batter.
-
Pour batter into prepared tin and bake for ~45 minutes until it's no longer liquid in the middle.
