Chickpea Quiche

A chickpea quiche with golden flaky pastry and cherry tomatoes


  • Pastry of your choice (optional)

  • 1 1/4 cups chickpea flour

  • 2 Tbsp Savoury Yeast Flakes

  • 2 Tsp Dried Oregano

  • 1 Tsp Dried Basil

  • 1 Tsp Dried Rosemary

  • 1/2 Tsp Black Salt

  • 1/2 Tsp Bicarb Soda

  • 1 Pinch of Fresh Black Pepper

  • 1 Clove Minced Garlic

  • 1 1/2 cups water

  • 2-3 cups of diced veggies (I used spinach, tomato, onion capsicum, zucchini, and pumpkin)

  • I also added a few cubes of vegan feta


  1. Preheat oven to 180°c.

  2. Line a flan tin with pastry if desired.

  3. Mix dry ingredients in a large bowl, add water and stir until combined. 

  4. Sautee your veggies until tender then mix them into your chickpea flour batter. 

  5. Pour batter into prepared tin and bake for ~45 minutes until it's no longer liquid in the middle.
