Chickpea Salad with Tahini Dressing
1 Tbsp (15-20g) Tahini
1 clove of garlic, minced
Juice of 1/4 of a lemon
1/4 cup (60mls) of water
Salad ingredient ideas:
1/2 cup canned chickpeas, drained & rinsed
A few handfuls of rocket & spinach, wilted
1/2 a carrot, grated
Handful of red cabbage, shredded
Handful of flat leaf Parsley, chopped
Handful of halved cherry tomatoes
Prepare the dressing by mixing all ingredients together until smooth. You may need more or less water depending on your desired consistency. You may also want to adjust the amount of lemon and garlic for your own taste preference.
Prepare your desired salad ingredients in a bowl, chickpeas and tahini are a fantastic combination but whatever you want to include is up to your own taste preference! When ready coat ingredients in most of the tahini dressing leaving a little to drizzle on the top.
Per tablespoon tahini contains 5g of protein, 2.5g of fibre, 182mg of calcium (~18% of the average RDI), 1mg of iron (5-13% RDI), and 1mg of zinc (7-13% RDI).
