Low FODMAP Baked Beans

A slice of toast with chickpea baked beans in a tomato and carrot sauce

Ingredients:

  • 1 tsp garlic infused EVOO⁣

  • 1/4 cup chickpeas⁣

  • 1/2 a carrot, diced⁣

  • 1/4 of a red capsicum, diced⁣

  • 1/4 tsp smoked paprika⁣

  • 1/4 tsp oregano⁣

  • Pinch of chilli flakes (optional)⁣

  • 2 Tbsp passata⁣

  • 2 sprigs of spring onion greens, chopped⁣

  • Iodised Salt and Pepper to taste⁣

​Method:

  1. Heat EVOO over medium heat and cook the chickpeas, carrot, and capsicum.

  2. Add the paprika, oregano and chilli and stir until everything is well coated.

  3. Add passata and allow to stew until cooked. You may need to add a few spoonfuls of water.

  4. Towards the end add spring onion and seasoning to taste. Serve your favourite low FODMAP bread!⁣
